Tuesdays with Dorie: White loaves

So here it is my first post about the baking group Tuesdays with Dorie. This recipe is white loaves from the book Baking with Julia. The book seems like it will be a great learning experience for me as there are many things I have yet to try and bake.

I first started by reading through the recipe and making sure I had all the right ingredients. I had to make a quick trip to the store to pick up some yeast as mine had passed its expiration date. I then began to bloom the yeast in the water and sugar. After I waited the 5 min for the yeast to wake up I added the flour to start my journey to bread!

I opted to use my kitchen aide stand mixer to handle this task and I had no worries that it would handle the job. As the dough hook sunk into the flour and water mixture it began to come all together and look like dough. I next added some salt and waited the 10 min of mixing time. As the Kitchen aide worked the dough it began to get really hot and smell funny but made it though all 10 min of the mixing.

I turned the dough out onto the counter and gave it a tiny bit of hand kneading and then left it in the bowl to rise for about 45 min. Next was the fun part which was punching down the dough to deflate it! I then turned it out onto the counter again and knead it some more. The dough was then shaped into a big rectangle and folded to fit into loaf pans which then had to go sit and rise again!

After the final rise it was time to bake. I baked for about an hour or so until it was golden brown. Once removed form the oven I turned the loaves out onto a cooling rack and let them cool. My whole apartment smelt wonderful and I couldn’t wait to make a sandwich!

Until the next recipe!
